Lime Pepper Tallapia with Couscous Salad
4 Tallapia Fillets
Sea Salt
Fresh Ground Pepper
Olive Oil
2 Limes
Heat non-stick pan over medium heat, add olive oil. Season the fillets and saute
until cooked. Remove from heat - halve the limes and squeeze over the fish.
Couscous Salad
1 cup
water
1 cup couscous
1 tablespoon of Smart Balance Margarine
Bring water and margarine to boil turn off
heat, stir in couscous, cover and set to the side
1 cup garbanzo beans
1 cup grape tomatoes halved
1/2
cup green onions sliced
1/4 cup fresh basil - chiffinaded
Juice of 2 limes
2 tablespoons olive oil
Combine the lime juice and olive oil in small bowl and set to the side
Remove couscous to a serving dish,
add the beans, tomatoes and onions, mix thoroughly then add the dressing and basil toss until coated. Set to the side
for about 30 minutes to let the flavors marry or make ahead and serve cold
